Red Cabbage, Radicchio and Endive Salad

How many times have you gone to the farmers’ market only to stare at the variety of available lettuces not knowing what to do with them? Three types we see regularly are cabbage, radicchio, and endive. When eaten plain, they can be sharp and bitter. When prepared properly, they can be not only healthful but divine.

Sylvie from Gourmande in the Kitchen has used these ingredients to create a light, splendid salad. The salad is perfect on it’s own or as a light accompaniment to a heavy holiday meal. The addition of fennel, raisins and roasted walnuts enhance the flavors even more. You can find the recipe for Red Cabbage, Radicchio and Endive Salad by clicking here.
