There’s little doubt this October will be one of the warmest on record. We’ve had a few chilly nights here in New England but it’s definitely unseasonably warm with next week’s predicted temperatures in the 60’s and 70’s. At the farm yesterday we picked up corn, tomatoes and radishes. How great is it to find fresh tomatoes in late October? Why not take advantage of the late season bounty and try a fabulous new dish?
Netherland’s based photographer and food-lover Renee Kemps was kind enough to share with us her recipe for French Puy Lentil and Goat Cheese Salad with Roasted Beets and Tomatoes. It’s as delicious as it is beautiful so give it a try. You can find the recipe for Lentil and Goat Cheese Salad by clicking here.
