Raw or cooked, cauliflower is a nutrient dense cruciferous vegetable. Rich in Vitamin C, cauliflower has been shown to have antioxidant and anti-inflammatory benefits. It comes from the same family as broccoli and has been an important part of diet since at least 600 B.C. Despite this, people are sometimes aren’t sure how to prepare it.
