We love beets. They look intimidating but all you need to do is give them a good scrub, trim at both ends, wrap in foil and roast at 425ºF until tender. Then, simply use the edge of a knife or paper towel to push off the outer skin and voila! A delicious, highly nutritious vegetable to eat on it’s own, sprinkle with goat cheese, or enjoy in your favorite recipe.

Sherrie, from the blog With Food and Love, shares with us her sensational recipe for Golden Beet Soup with Roasted Garlic Cashew Cream. Not only is it nutritious, it’s beautiful. You can find the recipe by clicking here.
