We love beets. They look intimidating but all you need to do is give them a good scrub, trim at both ends, wrap in foil and roast at 425ºF until tender. Then, simply use the edge of a knife or paper towel to push off the outer skin and voila! A delicious, highly nutritious vegetable to eat on it’s own, sprinkle with goat cheese, or enjoy in your favorite recipe.
