Smoky Beetroot Hummus

 

Fresh beets are among our favorite vegetables from the . Whether the beets are golden, red or striped, they preserve well and are wonderful roasted or freshly grated into a salad.  Beets are also high in antioxidants and anti-inflammatory benefits which can be especially helpful after a few hours of heavy snow shoveling. Turn them into a hummus for dinner or a snack with pita and they’re divine.
